Under the direction of Chef Didem Çetin, Aheste offers a unique experience by blending traditional Turkish dishes with contemporary techniques. Çetin defines the kitchen’s vision as “integrating new and emerging techniques into Turkish cuisine without losing its roots”. Inspired by the rich culinary cultures of Gaziantep and Şanlıurfa, Çetin has succeeded in presenting this heritage with a modern interpretation.

Aheste’s cuisine is characterized by carefully selected ingredients from the surrounding regions of Turkey. The use of local products is a priority in every dish. Çetin states that their kitchen is open to research and development; this approach means that kitchen staff at all levels can contribute to the menu. This dynamic system feeds Aheste’s culinary culture with constant innovation and creative thinking.

In addition to a la carte options, the menu includes tasting and vegetarian tasting menus. These menus are prepared in collaboration with over 100 purveyors, with an emphasis on seasonal produce. Each dish is carefully crafted with technical skill, texture and flavor combinations to offer guests a rich experience both visually and in taste.

Aheste aims to promote local wines internationally by focusing on Turkish wines in its beverage menu. Wine trainings for the kitchen and service teams are organized as part of this mission. The venue also has a small cocktail menu offering classic cocktails and specialty cocktails to accompany the food.
