Ulaş Durmaz, a chef whose passion for the kitchen was inspired by his grandfather and father, began his education by choosing to study cooking at a vocational high school. In the 10th grade, Durmaz started his career as a dishwasher in a professional kitchen and deepened his love for the kitchen by working for 2.5 years with the famous chef Şemsa Denizsel, whom he met at the age of 19.

The rich culture of Ayvalık and the diversity of North Aegean cuisine play an important role in his creative approach to food. Durmaz says that this cuisine harmonizes perfectly with other cuisines and that he especially likes combinations such as olive oil dishes and raw fish.

The menu of Red Balloon is always designed in parallel with its history. Mr. Ulaş creates the menu with his own interpretation of the flavors we are generally familiar with. In this way, the chef emphasizes his commitment to seasonality and sustainability.
