Chef Nobu Matsuhisa’s Japanese-Peruvian cuisine, also known as Nikkei cuisine, brings together Nobu’s iconic flavors with local flavors, which are highly recommended. Some of the prominent dishes are ‘Yellowtail with Jalapeno and garlic puree’, ‘Yellowtail Sashimi with Jalapeno Slices, and ‘Tuna Sashimi Salad.’ While ‘Rock Shrimp Tempura’ with a creamy spicy sauce flavored with yuzu juice and shiitake mushrooms is a favorite among the hot dishes, Nobu’s signature dish is the Black Cod with Den Miso, which is marinated in Den miso sauce for a few days and baked in the oven.
